Studies show that Omega-3 oils found in oily fish like salmon play an important part in the development of the human brain. This simple but flavoursome dinner is good enough to impress guests but wonât tie you up in knots in the kitchen.
Pre-heat a griddle pan. Score the skin of two salmon fillets and run the flesh and skin of both of them using 1 tbsp on good quality olive oil.
Put the salmon carefully on the griddle and cook for 2-3 minutes, before rotating the fillets through 90 degrees to create a checkerboard pattern on the fish and cook for another 2-3 minutes.
Meanwhile, pre-heat a second pan before turning the fish onto the other side, cooking or 2-3 minutes, rotating and cooking as before. Heat 1 tbsp of good quality olive oil in the second pan, add two small chopped onions and cook until soft. Add two large skinned and chopped fresh tomatoes and cook for 2-3 minutes. Add a dash of balsamic vinegar (to taste), then season with salt and pepper.
Serve the salmon on top of the tomato sauce with a fresh, crisp, mixed salad.
